What you'll need:
- 3 medium bananas, mashed
- 1/2 cup Kinloch Plantation Pecan Oil
- 2 eggs
- 1 cup sugar
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup chopped pecans or walnuts
Directions:
Preheat the oven to 350 degrees. Liberally grease a loaf pan.Combine all the ingredients in a large mixing bowl and mix well, but do not overmix. Pour into the prepared pan until a cake tester inserted in the center comes out clean, about 1 hour and 15 minutes. Turn out on a rack and cool before slicing.
Makes 1 loaf to serve 8 to 10
